Greek braised cauliflower is a real taste bomb. It is cooked in a delicious olive oil and tomato sauce and flavoured with cinnamon. This inexpensive and uncomplicated vegan dish is ready in about half an hour.
Ingredients:
1 medium, in pieces
(you can also use frozen cauliflower if needed)
Memmas Knossos extra virgin olive oil
1 onion, finely chopped
2-3 cloves of garlic, crushed
n. ½ can of canned tomatoes
(or grated fresh tomatoes, pureed tomatoes or tomato puree)
1 cinnamon stick
(or a pinch of ground cinnamon)
water or broth
(water will do, but the broth adds extra flavour)
salt and black pepper to taste

Wash the cauliflower and tear off the inflorescences.
Sauté the onion and garlic
Heat a generous splash of olive oil in a wide saucepan or pan.
Add the chopped onion and sauté over low heat until soft.
Add the garlic and sauté for another minute.
Add the cauliflower and tomato.
Add the cauliflower pieces to the pan and stir to coat them with a little oil.
Add the tomatoes and the cinnamon stick. Stir gently.
Add enough water or stock to just cover the bottom (no need to cover the cauliflower completely).
Season with salt and black pepper.
Cover with a lid and simmer over a low heat for about 20-25 minutes, until the cauliflower is soft.
Check the taste and adjust the seasonings if necessary.
Remove the cinnamon stick before serving.
