Flavored olive oil, such as chili olive oil, brings a ready-to-use combination of quality olive oil and spice aroma to cooking. It can be used for both frying and marinades. The flavor comes out best in marinades and as a final flourish, but frying at low or medium heat is also successful. Temperature control and correct timing are crucial.
Smoking and pan-frying with seasoned olive oil
The smoke point of flavored olive oil is practically the same as its base oil – typically extra virgin olive oil – meaning about 190-210 °C. Spices, such as chili, do not significantly alter the smoke point of the oil. This is perfectly adequate for pan-frying, stir-frying, and oven dishes, as most home cooking frying situations occur at temperatures between 160-200 °C.
For comparison: mild olive oil Withstands higher temperatures (around 220-240°C) because it is refined. Flavored extra virgin olive oil, however, is excellent for regular cooking. High temperatures weaken the delicate aromas of flavored olive oils, which is why their flavor is best enjoyed as a finishing oil.
This is how you fry with seasoned olive oil
Keep the stove on medium heat, maintaining the pan's temperature at around 150-180 °C (300-350 °F). This is sufficient to create a beautiful sear without destroying aromatic compounds. Chili olive oil will add a pleasant kick to the food at this temperature. You can sauté vegetables, fry fish, or soften onions – just avoid searing at high heat.
The most effective way is to add flavored olive oil right at the end of cooking or directly onto the plate. A dash of chili olive oil over a finished pasta dish or baked fish will bring out the full aroma. A simple yet impressive way to elevate the flavor of everyday food.
Flavored olive oil as a base for marinades
Olive oil's fat dissolves and transports fat-soluble aroma compounds evenly onto the surface of the raw ingredient. A chili oil-based marinade combines the oil and spice into one component, requiring fewer separate spices. The fat also protects the raw ingredient from drying out and promotes the formation of a beautiful sear.
A functional marinade is easy to make: use chili olive oil as a base, add an acid like lemon juice, and finish with herbs and salt. Let the ingredients marinate for at least 30 minutes. This works great for grilled vegetables, chicken, and halloumi.

- Flavored olive oil: Marinades, dressings, sauces, slow cooking.
