Keeping good quality olive oil in your cupboard can save you when you haven't had time or remembered to go to the shop. In fact, olive oil is an excellent base for pasta sauce.

Pour a generous amount of Memmas Knossos extra virgin olive oil, chopped garlic and chilli powder into the pan (you can also replace the oil with chilli oil, so you don't need to add the chilli separately). Heat over a low heat for a while.

Cook the pasta in well-salted boiling water, reserving a splash of cooking water.

Pour the pasta into the pan with the seasoned olive oil, heat, stirring all the time, and add a splash of cooking water if necessary.

Serve with parmesan cheese.
